Game Day (Or Any Day) Wings By Edan Goode

A while back, we visited Marco’s Coal-Fired Pizzeria in Denver where the highlight of a wonderful meal was the plate of the Coal-Fired Limoncello Wings. Upon first bite, my partner said “So this is what chicken is supposed to taste like.” The wings were the best we’d ever had and we’ve had us some great wings! That’s why, when the folks from Marco’s offered the In Good Taste Denver blog the recipe to make the wings at home, we jumped at the opportunity to offer it to you. No, we haven’t tried to make them yet. We’re planning on that for the Super Bowl. But seeing as how our Denver Broncos are playing a really big game this weekend (which will hopefully lead to the REALLY BIG GAME, come February 2), we thought we’d better rush this recipe to our readers. Now, if you just don’t have it in you to make the wings yourself, Marco’s does deliver which means you could also get their delicious pizza, salads and other goodies. Just sayin’.For the rest of us, here’s the recipe:

Serves 5 to 6 (depending on how hungry you are)

Marinade:
3 whole lemons, quartered
1/2 cup limoncello
1/4 ounce fresh thyme (about ½ T.)
3 ounces fresh rosemary (about 6T)
1/4 ounce fresh oregano (about ½ T.)
2 tablespoons kosher salt
Pinch of crushed red pepper
1 ½ cups extra virgin olive oil
 
5 pounds chicken wings

 
Blend the quartered lemons, limoncello and rest of marinade ingredients in a food processor. Fully coat the chicken wings and marinate in the refrigerator for up to 24 hours. Remove from marinade,and bake or grill wings at 450 degrees until browned and cooked through, 20 to 30 minutes. Actual coal-fired oven:optional!
